A soothing and nourishing Carrot Ginger Soup, infused with herbal goodness to support digestion and overall wellness.
Carrot Ginger SoupÂ
Ingredients:Â

1 tbsp gheeÂ

2 cups chopped carrotsÂ

1 tsp freshly grated gingerÂ
-
Salt to tasteÂ

Pepper to tasteÂ

3 cups vegetable brothÂ
-
1 bay leafÂ
-
½ cup coconut milkÂ
Directions:Â

Heat ghee in a non-stick pan over low heat until melted. Add carrots and ginger, then sauté for a couple of minutes.Â

Pour in the broth and bring to a high heat for 5 minutes.Â

Add the bay leaf, salt, and pepper to taste. Reduce heat to medium and let simmer for 20-25 minutes, until the carrots are tender.Â

Blend the soup in a blender until smooth.Â

Add coconut milk and blend again until fully combined.Â

Adjust salt and pepper if needed.Â

Garnish with cilantro before serving.Â
